In Rue En Neuvice, Liège, ideas and collaborations flourish around the Carré Noir artisan chocolate shop.

At the centre of this microcosm is the bubbly Mélanie Lemmens. An art historian, musician, chocolate lover... and Belgian, Mélanie found the ideal recipe when she founded Carré Noir in 2012.

Her shop and workshop reflect her adventurous and entrepreneurial spirit: classics such as flavoured pralines, truffles and ganaches sit alongside more original creations including ‘chocolate moustaches’ and ‘unicorn farts’. One thing remains the same: all these products are exceptional chocolates, designed with special attention to every detail.

The founder of Carré Noir, located in one of the prettiest streets of the Fiery City, is never short of ideas and inspiration. She is involved in numerous projects with neighbouring artisans and shopkeepers. With the boutique Les Vintrépides, she has developed a Rhum Ardent ganache, for example.

Her creativity is uncompromising on quality: Mélanie’s chocolate shop has been recommended in the prestigious Gault & Millau guide since 2021. This achievement reflects her philosophy and values.

Always in search of something new, the talented Mélanie has also ventured into ‘bean-to-bar’ chocolate-making. She now creates her own recipes and chocolate bars from cocoa beans.
