Discover Walloon authenticity and craftsmanship at Gourmet Sélection!

With eight companies showcasing high-quality products, Wallonia will present a major Pavilion at the 2025 edition of Gourmet Selection on September 21–22 in Paris. Characterful beers, sweet delights, exceptional spices, and artisanal know-how will be featured to meet the 2025 trends of French fine food. Come and meet the people who give every product a soul and a story.

For the first time, Wallonia has decided to participate in Gourmet Selection with its own collective pavilion to introduce Belgian specialties to French grocers. These gourmet products are perfectly aligned with the 2025 trends of French fine grocery. With the cookies from Generous, you will dive into nostalgic flavors, while Comptoir des épices takes you on a journey to discover global terroirs. It is hard to resist the guilt-free pleasure of chocolate from Darcis, while Sweet Cuberdons offers natural plant-based alternatives.

But these are not just trends and products—they are above all stories. Stories of family, passion, and challenges. At the stand, you’ll discover eight gourmet stories.

The beers of Ferme de Bertinchamps

The Bertinchamps brewery is, above all, a family story. That of a family in search of a characterful site to develop a new brewery and continue a family tradition. They fell in love with the old square farmhouse of Bertinchamps, which required major renovation work. Two years later, the brewery was launched and, more than ten years on, it produces a dozen beers, including two non-alcoholic options. It also became the first European producer of paired gins and tonics, which have already begun to win over France.

Sweet Cuberdons’ vegan candies

The cuberdon is a typical Belgian candy made from water, sugar, gum arabic, and traditionally flavored with raspberry. The secret of this cone-shaped treat lies in the mix and cooking temperatures, which create a crunchy shell and a soft liquid center. Since 2018, the confectioners at Sweet Cuberdons have been producing cuberdons without pork gelatin, replacing it with fruit pectin. This allowed the company to obtain vegan certification.

Butter shaped like candy from L&L Plaquette

L&L Plaquette butters offer a wide range of flavored butters, with more than 15 variations from fleur de sel to black garlic, white truffle, seaweed, or jalapeños. The range comes in customizable formats: 10, 20, or 30 g butter “candies,” as well as butter pats or blocks. These luxury butters are crafted for palaces, hotels, airline and maritime catering, and fine grocery stores. Today, the company is run by Lionel, the sixth generation at the head of this family business.

Gluten-free cookies from Generous

When Christophe Harou, one of the co-founders of Generous, discovered he was gluten intolerant, he decided to find a solution to his problem. Together with his wife Théodora, they met Jean-Benoît and Aurélie Ghenne, specialists in gluten-free bread and pastries. Together, they launched Generous: delicious and flavorful gluten-free cookies. No soy, corn, or wheat at Generous, but alternatives like tapioca flour, buckwheat flour, or potato starch. Transparency and traceability are guaranteed throughout the supply chain.

Jean-Philippe Darcis’ chocolates

Officially an ambassador of Belgian chocolate, Jean-Philippe Darcis needs no introduction in the chocolate world. He has represented Belgium in various culinary competitions, including the Pastry World Cup in Lyon, where he won numerous medals. In parallel, he opened his first tasting salon in 1996 at just 25 years old. In 2006, he became a pioneer of macarons in Belgium. Today, his chocolates are known and acclaimed in Belgium and beyond.

Comptoir des épices, a century of expertise

Since 1925, Comptoir des Épices has guaranteed its clients the quality and traceability of its products by personally overseeing every stage of processing: from importation to grinding to packaging. During a workshop visit in 2002, Anne and Jean-Vincent Vériter fell in love with the company, which was looking for new owners. The former owners didn’t hesitate to train them in the artisanal craft of spice processing, passing on 40 years of know-how. This heritage allows Anne and Jean-Vincent today to create blends with a thousand and one flavors.

High-end ravioli from La Ferme des 7 Fontaines

Founded in 2003 by two partners, La Ferme des 7 Fontaines focuses on high-end products for demanding professional catering. A producer of premium frozen ravioli, the company offers about thirty different fillings (with seafood, fish, meat, game, vegetables, and unique vegan varieties). Their expertise also extends to producing duck and goose foie gras. This year, La Ferme des 7 Fontaines distinguished itself in the “Best of 2025” Gourmet Selection contest, winning the jury prize for their partridge ravioli with toasted sesame seeds.

Beers inspired by local folklore at Brasserie des Légendes

At Brasserie des Légendes, local folklore (the Ducasse d’Ath with its Giants’ parade and the Witches’ Sabbath of Ellezelles) inspires the brewers in creating their beers. For 25 years, Pierre and Vinciane Delcoigne have constantly improved their facilities and production quality to offer authentic brews. They also own the Distillerie de Biercée, renowned since its creation in 1946. Their nectars are born from the rhythm of nature, carefully selected fruits, and the talent of their artisans of taste.
